Start with the menu legend
Choose an item carrying the GF symbol on the restaurant’s current menu. Keep the dish name in front of you when speaking with staff. A remembered label, a screenshot, or an ingredient list without its legend can leave out the instruction to request a change.
We have not established the complete set of GF-marked dishes or their required changes from this source review. Rather than assigning a modification to a dish ourselves, the next step is to have the restaurant identify it.
An opening request you can use
“I’m looking at your GF-on-request menu. For this dish, what ingredients would change, and can the kitchen make that version today? I need to avoid gluten. I also need to discuss how it will be prepared.”
Describe your own dietary needs accurately, including celiac disease or a food allergy when applicable. Add every other restriction before agreeing on the order. A gluten-free request does not answer a separate milk, egg, sesame, peanut, or tree-nut question.
Get three separate answers
- The change: which component is replaced or omitted, including sauces, garnishes, and sides?
- The preparation: what equipment and utensils will be used, and how will cross-contact be addressed?
- The handoff: how will the request reach the cook, and who will confirm the dish when it arrives?
